Overnight Oats – Two Different Ways

Breakfast is the most important meal of the day and unfortunately a lot of people tend to skip it. I am guilty of it myself. I do notice though that if I don’t eat something in the morning I am less alert for the whole day. This is especially true if I workout in the morning and don’t eat afterwards which is something you shouldn’t do at all. Since I don’t leave a lot of time in the mornings to actually make a breakfast I decided that doing some quick meal prep on the weekend or in the evenings would be beneficial. Overnight oats are such an easy and filling option. They are easy to pack and go and they take less than 10 minutes to prepare. I sometimes prep them on the weekend and they can last in my fridge 3-5 days. 

The great thing about this recipe is that the oats are naturally sweetened by the ripe banana. It’s a wholesome breakfast that will make you feel full and keep you full for longer. You can eat them cold which is the way I prefer to eat them or you can heat them up.

It’s the perfect breakfast on the go and now you won’t have an excuse to skip breakfast again!

Blueberry Almond Overnight Oats

For the oats:

  • 1/2 cup Old Fashioned Oats
  • 1/2 unsweetened Almond Milk (You can use any type of milk you like)
  • 1/2 ripe banana
  • 1/2 tsp vanilla extract
  • sprinkle of cinnamon

Toppings:

  • Fresh blueberries
  • Slivered Almonds

Instructions:

  1. Mash the banana and add to a bowl with the rest of the oat ingredients. Mix until combined.
  2. Add two scoops of the mixture to a pint jar. Add a layer of blueberries. Repeat.
  3. Top it off with a small handful of slivered almonds.
  4. Secure the lid and place in the fridge overnight.

Trail Mix Overnight Oats

For the oats:

  • 1/2 cup Old Fashioned Oats
  • 1/2 unsweetened Almond Milk (You can use any type of milk you like)
  • 1/2 ripe banana
  • 1/2 tsp vanilla extract

Toppings:

  • Small handful of trail mix (whatever kind you prefer)
  • Small handful of goji berries

Instructions:

  1. Mash the banana and add to a bowl with the rest of the oat ingredients. Mix until combined.
  2. Add the mixture to a pint jar.
  3. Top it off with the trail mix and the goji berries.
  4. Secure the lid and place in the fridge overnight.
