Toast- Four Ways

Who doesn’t love a good piece of toast with delicious toppings on it?! I love the classic peanut butter and jelly combination but I have decided to branch out and try some new ones and I have not been disappointed yet! Toast is what I tend to gravitate towards on the weekends when I am making breakfast. It is simple, takes absolutely no time to put together, and the topping possibilities are seriously endless.

For these I used a whole wheat french bread but you can really use any type of bread that strikes your fancy. I used our old trusty toaster to toast these pieces of bread but the broiler would work just as well and maybe better! Something to remember though, if using the broiler, is that bread burns easy and quick and can take mere seconds to go from the perfect golden brown to black or worse…an oven inferno (and yes I have learned this the hard way from experience).

When deciding what toppings I wanted to feature I went back to classic combinations that I knew I loved even when they weren’t on toast. There are also a million and one ideas on Pinterest if you find yourself overwhelmed with the possibilities πŸ˜‰

Herb Cream Cheese with Smoked Salmon and Fresh Dill

For this I made my own herb cream cheese with some fresh dill and chives from my garden. It’s best to leave the cream cheese out on the counter for a bit for it to soften before you add the herbs and I also added a bit of salt and pepper and garlic salt. This combo is so stinkin’ good I cannot tell you! The next time I do this I think a bit of lemon zest would be perfect as well with the delicious salty smoked salmon and fresh dill.

Pesto with Fresh Mozzarella Cheese and Pine Nuts

I used store bought pesto with this but homemade would probably be better. I LOVE fresh mozzarella. It really works well with the salty pesto and the pine nuts add a nice crunch. One thing to also note is that a little bit of pesto goes a long way! I kept the toppings cold but if you threw this under the broiler to melt the cheese that would be delicious too!

Smashed Avocado with Cherry Tomatoes and Red Pepper Flakes

I feel like a toast post wouldn’t be complete without some sort of smashed avocado topping. This one is great served as is or if you like some extra kick hot sauce would be amazing! You could take it a step further and serve a poached egg on top too. I love me some poached egg with avocado toast!

Brie Cheese with Honey and Walnuts

I think this is my favorite combination. I hosted Thanksgiving for the first time two years ago and I made this baked brie recipe with honey and walnuts on top of a wheel of brie and the whole thing was wrapped in puff pastry dough. UGHHHHH!! It was so freaking good that I made the same thing the following Thanksgiving! This combination actually inspired this post. I drizzled the honey over the brie cheese and then put the pieces under the broiler for a little bit so the cheese melted slightly and the honey caramelized a bit. Then I stuck the pieces of walnut into the melty cheese and drizzled a bit more honey. A little indulgent but it’s all about balance right. If you try any of these I highly recommend this one! 

 

All these combos would be great as an appetizer at any party though I would probably use a smaller piece of bread like a baguette to spread the ingredients a little farther. Either way, these are quick and easy to put together and if you try any of these send me a picture!
