Homemade Granola
One of my favorite ways to jazz up a bowl of creamy Greek yogurt is to add some fruit and a crunchy sweet granola. I’ve tried a lot of different kinds of granola from the store but the thing that kept nagging me was the amount of sugar that is added to the store brands. A while back I decided to make my own and you would not believe how easy it is to do! I like that I can make a huge batch and have it prepped for the whole week and I get to control how much sugar is added.
This granola is tasty and filling. Have it with Greek yogurt like I did in my breakfast on the go or have it by itself with some almond milk. Feel free to swap out any ingredients for ones that you like and I also think that raisins or dehydrated cranberries would be good to add too! If you do add the dry fruit add it after baking. Homemade Granola
- 4 cups old-fashioned oats (Not instant)
- 1 cup sliced almonds
- 1/2 cup shredded coconut (unsweetened)
- 1/4 cup pumpkin seeds (if you use unsalted add 1/2 tsp of salt)
- 1/2 cup pure maple syrup
- 2 TBSP Canola oil
- Salt (optional see above)
- 1 cup dried fruit (optional)
- Preheat oven to 350 degrees F.
- Toss all ingredients except dried fruit in a large bowl.
- Spread mixture on a parchment lined baking sheet.
- Bake for 25-30 minutes or until the granola is golden brown tossing once in the middle to ensure even browning.
- Let cool and add dried fruit (optional)
