My Favorite Vegetarian Recipes
For a while now I have opted to make at least one day in my week completely meatless. I also prefer to have at least one meal a day everyday be vegan or vegetarian. This has not only helped my vegetable intake but it has also made me feel a lot better about the food that I am fueling my body with.
Netflix has a ton of documentaries discussing the benefits of a completely plant based diet and I think I’ve watched every single one. The more I read and the more I watch it becomes even more clear to me that reducing or eliminating animal proteins from your diet is nothing but beneficial for your health and to the environment. I am not an expert and I am not saying that a plant based diet is what you need to be doing to be healthy. I also do not eat a plant based diet 100% of the time but I do think that it is something that I would eventually be interested in doing. For now I am focusing on reducing animal proteins and continuing to read and watch what I can about this way of eating and after each article or documentary I become more inspired to get in the kitchen!
One of my favorite parts about learning about the vegan and vegetarian diets is trying out new recipes. I have received a few vegetarian and vegan cookbooks and have loved trying out the recipes in them. I think there is a preconceived notion that you’ll feel deprived or starved on a plant based diet but I have found that to be completely false. The recipes below filling and delicious and if you don’t believe me just try them for yourself!
Chickpea Curry with Cashews from The Flat Belly Diet Cookbook
This recipe is a hit in our house! Jake and I both love curries and this one is super simple and delicious! We serve it with a serving of brown rice and some Greek yogurt and cilantro as a topping. So yummy!
Sweet Potato Chowder from The Forest Feast
This book is beautiful to look at. The author has created party menus that are full of delicious vegetarian recipes and are served in a beautiful fairy tale forest setting. I love sweet potatoes and this sweet potato chowder really hits the spot especially on chilly days!
Massaged Kale Caesar Salad from Eat Smart
I have featured this book a lot on this blog but I love it that much. The entire cookbook is filled with yummy vegan recipes and this one in particular never disappoints! The vegan thaini based caesar dressing is the star of the show and you probably already know how I feel about kale!
5 Spice Fried Rice with Sweet Potatoes from Thug Kitchen
I love fried rice. It is really easy to throw together on a week night and is always filled with a ton of flavor. This Thug Kitchen cookbook is new to my collection but I have been loving trying the recipes in it and this 5 spice fried rice with sweet potatoes recipe is soooooo good! Yeah really…more sweet potatoes π
Simple Asparagus Ribbon Pasta Salad from Seriously Delish
This is one of my favorite cookbooks in my kitchen right now. It is not a vegetarian or vegan cookbook but the recipes do not disappoint. This salad is full of flavor and can easily be made vegan by leaving out the feta cheese.

I have been vegan for 7 years now! Best decision I have ever made π Cooking and going to new restaurants is still as fun as it was day 1. I had a major health problem come up when I was in college and was told I would be on medication the rest of my life, but have been 100 percent healthy and medicine free since I became vegan.
