Protein Pancakes

One of my favorite childhood memories is on Sunday mornings my dad used to whip us up some yummy pancakes for breakfast. He mastered the Mickey Mouse shape early on and still knows the perfect ratio of huckleberries to batter for the perfect pancake. Most of the time Sunday morning cartoons would be on but we would sit at the table and eat as a family devouring every delicious bite.

Our Sunday breakfasts aren’t as often any more and god knows that I can’t eat pancakes like I used to but I cherish those little memories we made as the three musketeers more than my dad will probably ever know. In honor of Father’s day and my dad’s bitchin’ pancakes I wanted to share this lightened version of our breakfast favorite!

These pancakes are soooo good. They are the perfect substitute for the real thing and the best part is they take less than 10 minutes from pan to plate! 

Protein Pancakes with a Huckleberry Sauce

Pancakes:

  • 1 scoop protein powder
  • 1 egg
  • 1/4 cup unsweetened Almond Milk
  • 1/4 cup rolled oats
  • handful of huckleberries
  1. Mix all your ingredients except the huckleberries in a food processor or blender (I used my Nutri-bullet)
  2. Pour the batter into small pancakes on a warmed skillet on low-medium heat until heated through. Flip the pancake when you begin to see air bubbles forming in the middle. My recipe makes two medium sized pancakes.
  3. Place pancakes on separate plate once cooked and add your handful of huckleberries to the warm skillet.
  4. Let the huckleberries reduce until a sauce is formed. Pour over your pancakes and your breakfast is served!

The huckleberry sauce would be delicious with a squeeze of lemon and maybe some honey added for extra sweetness if you wanted but I like them the way they are. We go and pick these up in the mountains but I know that they can be found for sale at some farmer’s markets so keep your eyes peeled! If you can’t find huckleberries, blueberries would work just as great!!
