Lime Coconut Popsicles
I posted last Sunday about how much I love food on a stick. Popsicles are one of my favorite sweet treats especially during the summer. Last summer I decided to buy my own popsicle mold so I could make my own. While I didn’t use it as much last summer I fully intend to go popsicle crazy this summer!
For this recipe I put the lime in the coconut and …froze it into a popsicle form. Please tell me someone will get that musical reference! Lime and coconut are truly a match made in paradise. I love the tart lime with the sweet coconut and I know you will too!
Lime Coconut Popsicles
1 can coconut milk
zest of 1 lime
juice of 2 limes
1/4 cup of shredded coconut
- Add all the ingredients to a bowl and whisk together. If you have a bowl with a pour spout on it that would be ideal but I used a funnel to fill my popsicle molds.
- Fill your popsicle mold and place them in the freezer overnight or until they are frozen through!
- Enjoy on a hot summer day!
