To me, it’s always popsicle season but I especially love them during the warm late Spring and Summer months. My favorite is the Outshine Pineapple Frozen Fruit Bar and the raspberry flavor is delish too! I know this may be an unpopular opinion but I prefer fruit popsicles over an ice cream cone on a hot Summer day. There is something that is so refreshing about a frozen fruit bar. Now that I am in my gardening gal era, I have decided to make some popsicles of my own using some fresh ingredients from my garden. Easy Popsicle Recipes Perfect For Summer
The only popsicle recipe I have ever shared here on the blog was this Lime Coconut Popsicle back in 2017! Boy is that a delicious popsicle! This time around, I want to share some recipes using combinations you may not have thought of before. Some ingredients you might not think of when you think of popsicles but I can assure you, each combo is just as delicious as the last.
As for my molds, it is an old set from Amazon but I did add this set to my cart. When it comes to measurements here, you’ll need to go with what you think is going to fill your molds. For this post, I made two of each popsicle but had enough for at least 2-3 more.
Raspberry, Lime, & Mint
This recipe is based on what I think a raspberry mojito would taste like! It turned out so tart and delicious but I think next time I would use maple syrup to sweeten as honey has a very strong flavor and use a little bit more to counter the lime flavor. The mint adds such a refreshing element to these as well! You can strain the seeds out if you desire, I left them in for mine because honestly I can’t be bothered.
- 1 – 1 1/2 cups raspberries (fresh or frozen)
- Zest and Juice of 1 Lime
- A handful of fresh mint leaves, adjust to your desired flavor
- 2 TBSP maple syrup or sweetener of your choice
- A dash of water – more as needed, you want a fairly liquidy consistency not dissimilar to a margarita π
Instructions for all recipes:
Mix everything in a blender and pour into your molds. Freeze the popsicles for at least 4 hours before devouring them!
Strawberry & Basil
Have you ever had a strawberry salad with basil added? It is to DIE for. Usually, we pair basil with savory Italian dishes but it adds the perfect touch of sweetness that pairs so well with strawberries. Basil is a strong flavor so start with a little and adjust to your liking. I think this would be really good if you used watermelon instead of strawberries as well!
- 1 – 1 1/2 cups strawberries (fresh or frozen)
- Small handful of basil (start with a small amount and adjust to your liking)
- 1-2 TBSP maple syrup or honey (optional)
Pineapple & Lemon Thyme
Thyme is generally thought of as a woody herb along the lines of rosemary or savory. But, when a bit of lemon thyme is paired with a sweet sweet pineapple, the combination is a winner! Pineapple makes my mouth water and if I could live at the DOLE Pineapple Plantation in Hawaii…I would. I love anything with a pineapple in it including these popsicles!
- 1 – 1 1/2 cups pineapple (fresh or frozen)
- 1 tsp lemon thyme leaves (adjust to your liking, I break these up a bit in the pestle & mortar as the leaves are a bit small to get blended up)
Cantaloupe & Cilantro
I know what you’re thinking but trust me on this combination. I also know that cilantro isn’t for everybody but if you like it you should definitely try this! The sweetness of the melon pairs so well with the hint of cilantro you get in these popsicles. As with the basil, start with a little cilantro and adjust to your liking. I think you could also add some lime juice and a little touch of salt to enhance the flavors even more. I did find that mine separated a bit before I put them in the freezer, so I shook them up to reconstitute and they were good to go!
- 1/2 of a cantaloupe, seeds removed
- 10 leaves of cilantro (adjust to your liking)
- 1 TBSP maple syrup or honey (optional)
Blueberry & Lemon
Who doesn’t love a good blueberry and lemon combination?! One of my favorite desserts ever is a lemon and blueberry cheesecake. My mouth is watering just thinking about it! When blueberries are perfectly ripe, they are so sweet and pair so perfectly with the flavor of lemon. If you find that your blueberries are a little tart, add a little sweetener for your desired taste. I even add a few whole berries to the molds! These are not frozen cheesecakes but they sure do taste good!
- 1 – 1 1/2 cups blueberries (fresh or frozen)
- Zest of 1/2 Lemon
- Juice of the whole lemon
- Sweetener if desired
