How to Make Roasted Pumpkin Seeds 3 Ways

I don’t know about you but I love a crunchy salty snack. In all honesty, I don’t really crave sweet snacks, it’s always something salty. My usual go-to snack is a bowl of popcorn but this time of year I turn to something a bit more festive. Roasted pumpkin seeds are the perfect amount of crunch that I need in the afternoon as a pick-me-up. It’s one of the perks of throwing a pumpkin carving party. You get more seeds the more pumpkins you carve!

Today, I am sharing with you my favorite salt & pepper roasted pumpkin seed recipe. Then, I am also sharing two variations. One you may not expect and one that will satisfy your sweet tooth!

How to Make Roasted Pumpkin Seeds 3 Ways

Salt & Pepper

Ingredients:

For a cup of raw seeds, you’ll need…

  • 1 TBSP olive oil
  • 1 tsp salt
  • 1 tsp pepper

Method:

  1. Preheat oven to 350°F.
  2. Hand dry your pumpkin seeds and toss them in a bowl with the olive oil, salt, and pepper. Make sure they are well coated.
  3. On a parchment-lined baking sheet, spread the seeds in an even layer.
  4. Roast in the oven for 30 minutes, stirring a few times during the roasting to ensure even browning.
  5. The seeds are done when they are golden brown. Remove them from the oven and allow to cool. They will crisp up as they cool. Enjoy!
  6. Store your roasted seeds in an air-tight container in your pantry for up to 3 months!

Dill Pickle

Ingredients:

For a cup of raw seeds, you’ll need…

  • 1 TBSP olive oil
  • 1 TBSP white wine vinegar
  • 1 TBSP Dried Dill
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp red pepper flakes (optional)

Follow the method of roasting for the salt & pepper seeds above!

Cinnamon & Sugar

Ingredients:

For a cup of raw seeds, you’ll need…

  • 1 TBSP olive oil
  • 2 TBSP brown or white sugar
  • 1 tsp cinnamon
  • pinch of salt

Follow the method of roasting for the salt & pepper seeds above except reduce the cooking time to 25 minutes! You will need to break them apart like peanut brittle once they have cooled. Try to keep them in a single layer as best you can while stirring during the baking time.
