Seeds to Start in February in Zone 8b

February is the time when my seed starting kicks off for the upcoming gardening season. The month may be cold and grey, but the garden window in my kitchen starts to house my seed starting trays for the upcoming season. February may seem early, but giving your seedlings time to mature inside before planting them outside gives them a head start they need to grow strong and produce an abundance of veggies! If you’re in Gardening Zone 8, here are the seeds you can start this month!

I plan out my seed starting in January. This is when I inventory my old seeds, purchase new ones, decide on when to start everything, and make sure that all my seed starting supplies are in good shape. I decide where I will plant everything in the garden and if I will direct sow them or start them indoors. Here are the seeds you can start in February and what I am starting this month!

What to start in February Zone 8B:

  • Broccoli (indoors)
  • Bulbing fennel (indoors)
  • Celeriac (indoors)
  • Leeks (indoors)
  • Onions and Shallots (indoors)
  • Swiss Chard (indoors)
  • Cabbage (indoors)
  • Cauliflower (indoors)
  • Eggplant (indoors)
  • Arugula (direct sow late in the month)
  • Fava Beans (direct sow late in the month)
  • Peas (direct sow late in the month
  • Radishes (direct sow late in the month)
  • Carrots (direct sow late in the month)
  • Beets (direct sow late in the month)
  • Lettuce and salad greens (indoors or direct sow outside undercover)
  • Spinach (direct sow under cover)
  • Rapini (direct sow undercover)

*I know this may seem early but I haven’t had great success with peppers so I want to give them as much time to grow indoors before I plant them out in May.
