Breakfast Popsicles with Yogurt & Granola

Typically for breakfast, I enjoy good old eggs and toast. Savory breakfasts are my jam and rarely do I crave a sweet breakfast. But, during the warmer months, I like to mix things up with a bowl of yogurt with granola and berries. With warmer days on the horizon, I decided it would be so fun to make this combination into a breakfast popsicle and they turned out delicious *chef’s kiss*. Here’s how I made them!

Breakfast Popsicles with Yogurt & Granola

Ingredients:

  • A whole large tub of Greek Yogurt
  • Granola – You can use store-bought or make your own – I used half of a 12oz bag but you can use as much or as little as you want
  • Berries of your choice – I used a handful of strawberries (chopped) and a handful of blueberries

Method:

  1. Add the yogurt and the granola to a large bowl and stir to combine.
  2. On the stove, in a small pot add the strawberries and a splash of water. Allow the berries to stew over medium heat until your desired consistency. Repeat the same with the blueberries.
  3. Divide the yogurt and granola mixture into two separate bowls. Add the strawberry compote to one bowl and the blueberry compote to the second bowl. Allow to cool and then stir to combine.
  4. Fill your popsicle mold and stick them in the freezer overnight. Be sure that you tap the molds gently on the counter to release any air bubbles. I got my silicone mold from Amazon and the other from the grocery store a long time ago. I got 15 popsicles in total!
