How to Make Rice Krispy Treat Pumpkins

One of my favorite treats as a kid was Rice Krispy treats and I think they even made a cereal called Rice Krispy treats as well! I was obsessed and when I was brainstorming some fun Blogtober snacks to share, I knew that this idea for Rice Krispy treat pumpkins would go over a treat! I think I’ve made these maybe once as an adult. I followed the recipe instructions on my cereal box and deferred to my own method to make the pumpkin shapes. Shaping them into pumpkins took some finessing but I have added my tips and tricks below for the sweetest pumpkins around!

How to Make Rice Krispy Treat Pumpkins

Supplies:

  • 3 TBSP of butter
  • 40 jet-puffed marshmallows (Next time I will just use the whole bag) or 5 cups of the mini marshmallows
  • 6 cups of Rice Krispy cereal
  • Green food coloring
  • Yellow and red food coloring (to make orange)
  • Latex kitchen gloves
  • Canola oil
  • wax paper lined cooling rack or baking sheet
  • Black icing *optional

Method:

  1. In a large pot, melt the butter over low heat.
  2. Once the butter is melted, add the marshmallows and stir occasionally until they are all melted.
  3. Remove from heat and divide a small amount into a small bowl, this will be for the stems of the pumpkins.
  4. To the small divided mixture add a few drops of green food coloring and stir to incorporate the color. To the larger amount, add 10 drops of yellow and two drops of red and stir to incorporate. Add more for a more vivid orange color.
  5. Add a small handful of cereal to the green mixture and the rest to the orange mixture and stir to combine until all the cereal is well coated.
  6. Put your gloves on and add the smallest amount of oil to your hand and spread it all over both gloved hands even in between your fingers. This helps the mixture stick less to your hands when you’re shaping.
  7. Pick out a small handful of the orange mixture and shape it into a ball. Place the ball on the wax paper lined cooling rack. Repeat until you’ve run out of the orange mixture. I tried to keep the balls relatively even in size.
  8. Grab small amounts of the green mixture and shape it into small stems and stick them onto each pumpkin.
  9. Take the black icing and draw your Jack-O-Lantern faces on each pumpkin. Use the smallest amount you can and if possible, lay the pumpkin on its side face up to help prevent the icing from dripping. Let the icing dry and then enjoy!
