2 Easy & Delicious Summer Popsicle Recipes

Popsicles are my favorite Summer treat. They are refreshing, tasty, and so easy to make at home. I have several popsicle recipes on the blog, and my favorite ones are the ones that utilize ingredients from my garden. The two I am sharing with you today are so tasty, and one has an ingredient you might not think of when it comes to popsicles! Each one is 4 ingredients or less, and I think you’re going to love them! So without further ado, here are two more delicious popsicle recipes you can make at home this Summer!

2 Easy & Delicious Summer Popsicle Recipes

Mango, Lime, & Mint

Mint is such a Summer flavor for me. It grows in abundance in the container I have for it every Spring and Summer. I love finding different uses for it to make the most of its growing season, and this first popsicle recipe was such a winner! I also love the sweetness of the mango mixed with the tartness of the lime. Such a cool and refreshing treat during these long hot Summer days!

Ingredients:

  • 2 cups frozen or fresh mango
  • Juice of a lime
  • a small handful of mint leaves
  • water

Method:

  • Combine all of the ingredients in your blender or food processor. Blend it all up until you have the consistency of a thick smoothie. Taste to ensure you’re getting all the flavor you like, and add more mint or lime juice as needed until you get your ideal flavor.
  • Pour into your favorite popsicle molds and freeze for 8 hours or overnight.
  • Enjoy on a hot Summer day!

Blueberry, Lemon, & Lavender

I have lavender growing all over my yard. I planted a bunch up in our front landscaping because 1) it is drought tolerant and we don’t really water our front landscaping, so I needed hearty plants that could survive the Summer, and 2) I just love the way lavender looks and smells! I have used my lavender in various flower arrangements for my house, but never as an ingredient in my kitchen, so I was super excited to give this a try! Lavender can be a strong flavor, so it’s best to start with a tsp or two of the simple syrup and build the flavor from there. This flavor combo is so delicious, the hint of sweet floral lavender flavor is perfect when combined with sweet blueberries and tart lemon!

Ingredients:

  • 2 Cups of frozen or fresh blueberries
  • The juice of 1 1/2 lemons
  • 5 tsp lavender simple syrup
  • water

Method:

  • Combine all your ingredients into your blender or food processor. Blend it all up until you have the consistency of a thick smoothie. Taste to ensure you’re getting all the flavor you like, and add more lemon or lavender simple syrup as needed until you get the flavor you like.
  • Pour into your favorite popsicle molds and freeze for 8 hours or overnight.
  • Enjoy on a hot Summer day!
