Simple Homemade Peanut Butter Cups

Halloween candy is one of the best parts of the Halloween season! We always buy a few bags to give out to trick-or-treaters, but we, of course, take a few of our favorites as a treat. As a child, I disliked anything chocolate-flavored, but as an adult, I have developed a taste and love for dark chocolate. I also love peanut butter cups so today, I am combining my love for dark chocolate and peanut butter cups and making my own homemade version! Simple Homemade Peanut Butter Cups

In all honesty, I was hoping that the peanut butter would become more solid to make the eating experience less messy, but these turned out so delicious that I don’t mind so much. It’s probably because I used natural peanut butter, which tends to be more runny.

Ingredients:

  • 2 1/2 cups chocolate chips (I used sugar-free dark chocolate but you can use whatever chocolate chips you want!)
  • 2 1/2 TBSP Coconut oil
  • 3/4 cup smooth natural peanut butter (I think crunchy peanut butter would be so tasty too!)

Supplies:

  • Cupcake liners

Method:

  1. Using a microwave-safe bowl, heat your chocolate chips and 1 TBSP of the coconut oil in 30-second increments in the microwave until melted and smooth.
  2. Line a cupcake pan with the liners. Add 1 – 1 1/2 TBSP of the melted chocolate into each liner, making sure that it covers the bottom of the liner.
  3. Place your cupcake pan in the refrigerator for 10 minutes so that the chocolate will solidify.
  4. While that’s cooling, add the remaining coconut oil to the peanut butter and mix until smooth.
  5. Remove your cupcake pan from the fridge and spoon 1 TBSP of the peanut butter mixture into each of the cupcake liners. Make sure that it covers the bottom chocolate layer.
  6. This is optional, depending on how thick your peanut butter is, put the cupcake pan back in the fridge for 30 minutes to help the peanut butter thicken more.
  7. Remove from the Fridge and spoon 1 TBSP of the remaining chocolate on top of each peanut butter layer. Place in the fridge for an additional 10-20 minutes to allow the top layer to solidify.
  8. Remove from the fridge and enjoy!
