    Homemade Granola

One of my favorite ways to jazz up a bowl of creamy Greek yogurt is to add some fruit and a crunchy sweet granola. I’ve tried a lot of different kinds of granola from the store but the thing that kept nagging me was the amount of sugar that is added to the store brands. A while back I decided to make my own and you would not believe how easy it is to do! I like that I can make a huge batch and have it prepped for the whole week and I get to control how much sugar is added. This granola is tasty and filling. Have it…

    Salsa 3 Ways

When it comes to snacks, I can’t think of anything better than crispy tortilla chips and some fresh salsa. In fact, my favorite part of going out to eat at a Mexican restaurant is the chips and salsa that they bring to your table. I always ask for extra salsa when they bring the meal because I just love it that much. I use salsa at home a lot too. I put it on eggs, burgers, in tacos, burrito bowls, even on salads. To me salsa really is the perfect complement to anything you would normally put tomatoes in and it gives you that little extra kick of spice when…

    Two More On-the-Go Breakfasts

Breakfast is probably my favorite meal of the day. On weekends I go a little more elaborate with my breakfast and take more time making it but during the week who really has the time? During the week I tend to cut it close with my time leaving the house and it is nice to be able to open the fridge and grab something I know is healthy and take it to work with me. I have already shared two overnight oat recipes but I definitely like a little variety where my meals are concerned so I decided to share two more ideas for simple and filling on the go breakfasts!…

    Favorite Cookbooks

By now you know I have a weakness for buying personal development books. But you probably also could guess that I also have an obsession with cookbooks. I could spend hours in the cookbook section at the library and prefer that over the cookbook section at the book store mostly because I cannot buy the books at the library (Gotta save that $ for Spain and France in September!!). Another dangerous territory in my quest for all the cookbooks is Amazon and I find myself browsing and adding to my cart and before I know it there’s like 10 books in there and my order total is ridiculous! As it…

    Toast- Four Ways

Who doesn’t love a good piece of toast with delicious toppings on it?! I love the classic peanut butter and jelly combination but I have decided to branch out and try some new ones and I have not been disappointed yet! Toast is what I tend to gravitate towards on the weekends when I am making breakfast. It is simple, takes absolutely no time to put together, and the topping possibilities are seriously endless. For these I used a whole wheat french bread but you can really use any type of bread that strikes your fancy. I used our old trusty toaster to toast these pieces of bread but the…

    Healthy Snacks

If you fail to prepare, you’re preparing to fail. Having healthy snacks to reach for is absolutely necessary to keep me from giving into that vending machine temptress in the break room at my office. In the past my snacks have been pretty basic ranging from carrot and celery sticks to apple slices. Recently, I have been looking into more of a variety of snacks to keep my interest peaked and to prevent me from finding solace in the arms of a bag of cheese-its. These snack ideas are simple to prepare and come together in a flash. They are easy to add into your weekly meal prep or to…

    A Week of Dinners

Sometimes I need a little inspiration when it comes to planning dinners for the week. I like to get inspiration from a lot of different places including Pinterest, cookbooks, and food blogs. I thought it would be a great idea to show you a week of typical dinners at our house in hopes that it can give you a little inspiration. I would like to make this a recurring series on this blog and include lunches and breakfasts as well. Let me know what you think and what you’re making for dinner!! Monday (Meatless Monday)-Vegan Kale Caesar salad with Homemade Rye Bread Croutons from the Eat Smart Cookbook Tuesday- Lightened…

Overnight Oats – Two Different Ways

Breakfast is the most important meal of the day and unfortunately a lot of people tend to skip it. I am guilty of it myself. I do notice though that if I don’t eat something in the morning I am less alert for the whole day. This is especially true if I workout in the morning and don’t eat afterwards which is something you shouldn’t do at all. Since I don’t leave a lot of time in the mornings to actually make a breakfast I decided that doing some quick meal prep on the weekend or in the evenings would be beneficial. Overnight oats are such an easy and filling…

    Dark Chocolate Dipped Apple Slices

I’ll be honest with you…I used to detest chocolate. Milk Chocolate, dark chocolate, white chocolate, in a cake, in a chocolate bar, Hershey kisses, ice cream (forgive me!), you name it I refused to eat it. There was always something very organic about the taste and when I say organic I mean at one point I thought it tasted like dirt. Now days I still don’t seek out chocolate as my go to sweet treat of choice but when it comes to fruit dipped in chocolate I can’t seem to say no. And go figure my chocolate of choice when making this delectable treat is dark chocolate!  This recipe is…

    Garlic Sauteed Kale & Mushrooms

There was a time when I couldn’t stand cooked greens. I had this ridiculous aversion spinach, kale, and collard greens cooked in any way. Just watching Popeye swallow an entire can of spinach made me gag a little. Thankfully I came to my senses and now sauteed kale is one of my favorite side dishes for dinner. Not only is it delicious and nutritious, but it is so quick and easy to prepare. Leafy greens are packed with vitamins and minerals and the darker the leaf the more nutrient dense it is. Kale is considered a superfood and contains a phytonutrient called sulforphane which has been shown to have cancer fighting…
